Ingredients
  

  • 2 1/2 tsp salt-divided
  • 1 1/2 tsp pepper-divided
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/8 tsp allspice
  • 2 pork tenderloins-trimmed
  • 3 tbsp vegetable oil-divided
  • 2 colored bell peppers-cut into 1/4 strips
  • 1 onion-sliced into 1/4 strips
  • 2 cloves garlic-minced
  • 1/4 cup cilantro-minced
  • 1 tbsp lime juice
  • 12 small tortillas-corn or flour

Instructions
 

  • Combine 2 teaspoons salt, 1 teaspoon pepper, cumin, chili powder, garlic, oregano and allspice in a bowl. Set aside.
  • Cut each tenderloin into 1/3 pieces horizontal. Pat dry with paper towels and sprinkle with the spice mixture.
  • Heat a cast iron skillet over medium heat for 3 minutes. Add 2 tablespoons oil to skillet and coat skillet. Cut each pork tenderloin in half so it will fit in the skillet. Add pork to skillet and cook until well browned on both sides. Temperature should register 135', about 5-7 minutes per side. Transfer each piece to a cutting board and tent with aluminum foil.
  • Add remaining oil and bell pepper to skillet and cook for 3 minutes. Stir in onion, 1/2 teaspoon salt and remaining pepper. Cook until vegetables are softened. Stir in garlic and cook for 30 seconds. Off heat stir in cilantro and lime juice.
  • Slice pork crosswise into thin strips. Stir in any accumulated juices from carving the pork back into the skillet. Push vegetables to one side of skillet add pork to the empty side of skillet.
  • Serve fajitas with tortillas and toppings.
