Ingredients
  

  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 1/2 tbsp whole grain mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup olive oil
  • 1/4 cup capers
  • 1 tbsp minced dried onion
  • 4 zucchinis-sliced thin
  • 1 cup parsley-chopped
  • 1/2 cup mint-chopped

Instructions
 

  • In a large bowl mix the zest, juice, mustard, salt and pepper. Whisk in olive oil. Stir in capers and minced onion.
  • Add the zucchini and toss until the zucchini is coated with the dressing. Fold in the parsley and mint.
