Peach Buckle

Peach Buckle is an old-fashioned summer dessert filled with sweet, juicy peaches and topped with a buttery cinnamon streusel. As it bakes, the tender cake rises around the fruit, creating the rustic “buckled” appearance that gives this classic dessert its name.

With soft peaches, a moist vanilla cake, and a golden crumb topping in every bite, this easy peach dessert is perfect for summer gatherings, brunch, or a simple family dessert. Serve it warm on its own or add a scoop of vanilla ice cream for an extra-special treat.

🛒 Ingredient Notes

  • Fresh peaches: Use ripe, juicy peaches for the best flavor. Peel and chop them before folding them into the batter.
  • Butter: Adds richness to both the tender cake and the crumbly streusel topping.
  • All-purpose flour: Provides structure for the cake and forms the base of the streusel.
  • Sugar: Granulated sugar sweetens the cake, while brown sugar gives the topping a deeper caramel-like flavor.
  • Orange zest: Adds a subtle citrus brightness that complements the peaches beautifully.
  • Vanilla: Enhances the sweetness of the peaches and gives the cake a warm, classic flavor.
  • Nutmeg: A small amount adds warmth to the streusel without overpowering the fruit.

💡 Kris’s Tip: Use peaches that are ripe and fragrant but still slightly firm. Very soft peaches can release too much juice into the cake. Fold them gently into the batter so they stay in nice pieces as the buckle bakes.

🍽️ What to Serve With Peach Buckle

Peach Buckle is delicious served warm or at room temperature. For an extra-special dessert, add a scoop of vanilla ice cream and let it soften over the warm cake, or serve each slice with a dollop of freshly whipped cream. A cup of coffee or hot tea also pairs beautifully with the buttery streusel and sweet peaches.

❓ Frequently Asked Questions

Can I use frozen peaches for Peach Buckle?

Yes. Frozen peaches can be used when fresh peaches aren’t available. Thaw them completely and drain off any excess liquid before adding them to the batter so the buckle doesn’t become too wet.

Can I make Peach Buckle ahead of time?

Yes. Peach Buckle can be baked a day ahead and stored covered at room temperature. For longer storage, refrigerate it. Warm individual slices briefly before serving if you prefer that fresh-from-the-oven texture.

How should I store leftover Peach Buckle?

Cover leftover Peach Buckle tightly or transfer it to an airtight container. Store it at room temperature for up to 2 days or refrigerate it for up to 4 days. You can enjoy it cold, at room temperature, or gently warmed before serving.

📝 Recipe Tips

  • Choose ripe but firm peaches: They’ll give you plenty of sweet peach flavor without making the cake overly wet.
  • Drain excess juice: If your chopped peaches are especially juicy, drain off some of the liquid before adding them to the batter.
  • Don’t overmix the batter: Mix just until everything is combined to keep the cake tender.
  • Fold the peaches in gently: This helps keep nice pieces of fruit throughout the buckle.
  • Keep the streusel crumbly: Mix the topping just until coarse crumbs form rather than turning it into a paste.
  • Check for doneness: The top should be golden and a toothpick inserted into the cake portion should come out clean or with a few moist crumbs.

Ingredients

CAKE

  • tbsp butter-room temperature
  • 1 2/3 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1 sm orange-zested
  • 1 egg
  • 1/2 cup milk
  • 3 cups peaches-chopped

TOPPING

  • 1/4 cup granulated sugar
  • 2 tbsp brown sugar
  • 3 tbsp all-purpose flour
  • 1/4 tsp nutmeg-fresh ground
  • pinch salt
  • 2 tbsp butter-room temperature
  • Vanilla ice cream-serving

Instructions

CAKE

  • Preheat the oven to 375 degrees. Spray an 8×8 baking dish with cooking spray.
  • Whisk the flour, baking powder and salt in a medium bowl.
  • In your mixer beat the butter, sugar and zest until fluffy on medium speed, about 3 minutes. Add in the egg and beat until combined. Reduce speed to low and beat the milk until incorporated. Add the flour and beat until smooth, scraping down the bowl as needed. The batter will be thick.
  • Carefully stir in the peaches and then spread in prepared pan.

TOPPING

  • Mix the granulated sugar, brown sugar, flour, nutmeg, and salt in a small bowl. Work in butter with your fingers (I use gloves) until crumbly. Scatter evenly over the top of the batter.
  • Bakre until the top is golden brown and a toothpick comes out clean, about 1 hour. Watch towards the end of the bake and cover with foil so it doesn't burn.
  • Let cool for 30 minutes before serving.
