Cilantro Lime Rice-Instant Pot
Ingredients
- 2 Cups Jasmine rice
- 2 Cups Chicken broth
- 1 Tsp Salt
- 2 Bay leaves
- 3 Tbsp Cilantro-chopped
- 2 Tbsp Lime juice
- 2 Tbsp Lemon juice
- 1 Limes zest only
Instructions
- Add unrinsed rice to the liner of the pot along with the broth, salt and bay leaves. It takes about 15 minutes for the Instant Pot to come to pressure.
- Lock the lid on the pressure cooker and set the vent to sealing. Using the manual button and set it to 3 minutes on high pressure.
- When the Instant Pot beeps let it come to pressure manually or NPR-natural pressure release. The lid pin will drop in about 10-15 minutes.
- Open the lid and stir in the lime juice, lemon juice, zest and cilantro. Stir well and serve.
