Ingredients
  

Cabbage Slaw

  • 3 Cups Green cabbage-shredded
  • 1 Orange-peeled and segmented
  • 2 Tbsp Green onion-sliced
  • 2 Tbsp Rice vinegar
  • 1 Tbsp Canola oil
  • 1/2 Tsp Sugar
  • 1/4 Tsp Sesame oil

Chicken Katsu

  • 2 Tbsp Flour
  • 1 Egg
  • 1/8 Tsp Salt
  • 1/8 Tsp Black pepper
  • 2/3 Cup Panko bread crumbs
  • 4 Chicken breasts-sliced horizontally
  • Cooking spray
  • Cauliflower rice
  • 1/4 Cup Tonkatsu sauce

Tonkatsu Sauce

  • 1/2 Cup Ketchup
  • 2 Tbsp Soy sauce
  • 1 Tbsp MIrin
  • 1 1/2 Tsp Brown sugar
  • 1 1/2 Tsp Worchesrershire sauce
  • 1 Tsp Ginger-grated
  • 1 Clove Garlic-minced

Instructions
 

Cabbage Slaw

  • In a large bowl toss all the slaw ingredients and set aside.

Chicken Katsu

  • Using 3 different shallow dishes, add flour to one, to the second dish add eggs, salt and pepper and beat. In the third dish add panko.
  • Coat each chicken piece in flour, shaking off excess. Next dip the chicken in the egg mixture and then press the chicken into the panko coating completely. Let rest for 15 minutes.
  • Preheat the air frter to 400'. Spray both sides with cooking spray. Work in batches, arrange chicken on the tray in a single layer. Cook until golden brown, turning halfway through cook time, 9-10 minutes.
  • Serve with slaw, cauliflower rice, tonkatsu sauce and scallions.

Tonkatsu Sauce

  • Stir together all the sauce ingredients in a small bowl. Chill at least 30 minutes. It's best if you can chill it overnight.
