Airfried Carrots and Squash
An easy way to get your veggies on the table during a busy weeknight. These air fried carrots and squash are ready in less than 15 minutes without lighting the oven.
I was getting a late start on dinner. After checking the vegetable crisper I decided on carrots and squash. Grabbed my scissors and went to the garden to cut some marjoram and oregano. Chopped the carrots and squash, and tossed it with olive oil, salt, pepper and the fresh herbs.
Airfried Carrots and Squash
Airfried carrots and squash is a quick, easy and tasty side dish when you want to get something healthy on the table during the week.
Ingredients
- 3-4 large carrots
- 2 yellow squash
- olive oil
- salt and pepper
- 1 tbsp fresh marjoram
- 1 tbsp fresh oregano
Instructions
- Peel and cut carrots into wedges about 1" long. Cut squash in half lengthwise and then cut into 1/2' coins. If they are large then cut the halves in half again so you have 4 pieces then cut those into 1/2" coins.
- Put carrots into a bowl and toss with olive oil, salt, pepper and fresh herbs. Put the carrots on the airfryer tray and cook at 400' for 8 minutes.
- While the carrots are cooking toss the squash with olive oil, salt, pepper and fresh herbs. When the timer goes off for the carrots add the squash to another tray in the airfryer and cook both the carrots and squash for 7 minutes at 400'
- When the time is up you can serve them right from the tray or put them on a pretty platter. If the veggies aren't cooked enough just add a few more minutes.
