Ingredients
  

  • 1 lb ground beef
  • 2 eggs
  • 1/2 cup panko
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 cup goat cheese crumble+more for garnish
  • 5 oz honey fig spread
  • 3 tbsp apple cider vinegar
  • 1/2 cup water
  • chopped parsley-garnish
  • mixed greens

Instructions
 

  • Preheat oven to 425'. Coat sheet pan with oil or use parchment paper.
  • In a large mixing bowl combine beef, eggs, panko, salt, pepper, garlic and goat cheese. Roll into 1" meatballs. Place on the sheet pan and bake for 15 minutes to the internal temp of 160'.
  • Combine the fig spread, vinegar and water in a small saucepan. Simmer for 10-15 minutes until reduced by half.
  • Remove meatballs from oven and transfer to saucepan. Stir to coat meatballs in fig sauce.
  • Place meatballs on top of mixed greens drizzle with sauce. Garnish with goat cheese and parsley. Serve.
