Instant Pot Peach Crisp
Instant Pot Peach Crisp the perfect summertime dessert using fresh peaches topped with a crunchy oat streusel. Make it decadent by adding vanilla ice cream.
Summertime means stone fruit season. Grab some napkins to wipe the juice running down your chin. That means fresh peaches are in season which makes this peach crisp taste over the top. Although frozen will work too.
For the filling there’s no need to peel the peaches. Add all your ingredients to a bowl and toss to coat well. Then empty the bowl into your Instant Pot liner. Cook this for 4 minutes.
Finish the peach crisp filling in the Instant Pot by making a slurry with cornstarch and water. Stir using the sauté function until the filling thickens. It takes a couple minutes and will continue to thicken as it cooks.
To make the topping combine all the ingredients in a bowl except the butter. Use parchment paper or a silicone mat to cool the topping.
Just one of the reasons I love my Instant Pot is that you don’t need to use the oven and heat up the house.
You can serve this crisp as is. The peaches are soft with a hint of tart and warmth from the cinnamon. The streusel topping is crunchy. Adding ice cream adds a creamy coldness.
Instant Pot Peach Crisp
Ingredients
Peach Filling
- 8 Cups Peach wedges-6 or 7 peaches
- 1/4 Cup Granulated sugar
- 1/4 Cup Brown sugar
- 1/2 tsp Cinnamon
- 1 tsp Lemon juice
- 1 tsp Vanilla
- 2 Tbsp Cornstarch
- 2 Tbsp Water
Peach Crisp Topping
- 1/2 Cup Pecans-chopped
- 1 1/2 Cups Old fashioned oats
- 3/4 Cup Brown sugar
- 1/2 tsp Salt
- 1/2 Cup Butter-1 stick
- 1/2 Cup All-purpose flour
Instructions
Peach Filling
- In a large bowl, add the peaches, sugars, cinnamon, lemon juice and vanilla. Stir gently to combine. Empty the bowl contents into the Instant Pot liner.
- Close the lid and set the Instant Pot for 4 minutes on high. Let the Instant Pot release the pressure naturally. This takes about 15 minutes.
- Stir together the cornstarch and water mixing well to combine. When the pressure releases remove the lid and press cancel. Select the saute function and stir in the cornstarch slurry. Continue to stir until the mixture thickens about 2 minutes. The mixture will thickens as it cools.
Peach Crisp Topping
- In a medium bowl combine the pecans, oats, flour, brown sugar and salt.
- In a skillet over medium melt butter. Empty contents of bowl into skillet. Stir often, and cook until golden brown. About 6-8 minutes.
- On a silicone mat or parchment paper dump contents of the skillet. Let cool.
Serving
- Serve warm in individual bowls topping with the crisp topping.. Add ice cream if desired.
- Store filling leftovers in a container in the fridge. Store topping in a container in a cool dry place.
