Ingredients
  

LIME SIMPLE SYRUP

  • 1/4 Cup Sugar
  • 1/4 Cup Water
  • 1/2 Lime zested
  • 2 Sprigs Mint leaves

MOJITO

  • 1/2 Lime wedges
  • 1 Sprig Mint leaves
  • 2 Oz Rum
  • 3/4 Oz Lime juice
  • Clubb soda
  • Mint sprig-garnish
  • LIme wedge

Instructions
 

LIME SIMPLE SYRUP

  • Mix sugar and water in a saucepan and bring to a simmer. Cook until the sugar has dissolved. Remove from the heat and stir in lime zest and mint leaves.
  • Set aside to cool, strain out mint and zest. Store extra in the fridge.

MOJITO

  • Put lime wedges in the bottom of a tall glass along with the mint leaves. Muddle to release the juice and bruise the mint.
  • Add 1 Oz simple syrup, rum and lime juice to your glass and stir well. Top with club soda and garnish with mint sprig.
