Ingredients
  

  • 1 head cauliflower
  • 1/2 cup olive oil
  • 1 tsp salt
  • 3/4 tsp pepper-divided
  • 1/2 cup Castelvetrano olives-pitted
  • 1/2 cup mint leaves
  • 1/4 cup parsley
  • 2 tbsp lemon juice
  • 1 clove garlic-minced
  • 1/4 tsp red pepper flake
  • 1/4 cup pine nuts-toasted

Instructions
 

  • Preheat oven to 475'
  • Cut cauliflower into 2" florets. Toss cauliflower with 1/4 cup olive oil, 1/2 tsp salt and 1/2 tsp pepper on a rimmed baking sheet. Spread cauliflower in an even layer and roast for 25 minutes.
  • Combine olives, mint, parsley, lemon juice, garlic, red pepper flakes, remaining salt and pepper in a food processor. Add 1/4 cup olive oil and pulse 6 times. Scraping down bowl as needed. Add pine nuts and pulse until combined, about 2 pulses.
  • Transfer cauliflower to serving platter. Spoon half of sauce over cauliflower and serve the rest of the sauce on the side.
