Roasted cauliflower-mint olive sauce has a nice roasted texture with a tangy mint sauce. Pairs perfect with chicken or beef.
Ingredients
- 1 head cauliflower
- 1/2 cup olive oil
- 1 tsp salt
- 3/4 tsp pepper-divided
- 1/2 cup Castelvetrano olives-pitted
- 1/2 cup mint leaves
- 1/4 cup parsley
- 2 tbsp lemon juice
- 1 clove garlic-minced
- 1/4 tsp red pepper flake
- 1/4 cup pine nuts-toasted
Instructions
- Preheat oven to 475'
- Cut cauliflower into 2" florets. Toss cauliflower with 1/4 cup olive oil, 1/2 tsp salt and 1/2 tsp pepper on a rimmed baking sheet. Spread cauliflower in an even layer and roast for 25 minutes.
- Combine olives, mint, parsley, lemon juice, garlic, red pepper flakes, remaining salt and pepper in a food processor. Add 1/4 cup olive oil and pulse 6 times. Scraping down bowl as needed. Add pine nuts and pulse until combined, about 2 pulses.
- Transfer cauliflower to serving platter. Spoon half of sauce over cauliflower and serve the rest of the sauce on the side.
