Ingredients
  

  • 1/4 cup may or lite mayo
  • 2 tsp dehydrated onion
  • 1 tbsp dill pickle-chopped
  • 1/2 tsp hot sauce
  • 1/2 tsp pepper-divided
  • 1 cup panko breadcrumbs
  • 12 oz shrimp-peeled and deveined
  • 1/2 tsp old bay
  • 1/2 cup vegetable oil
  • 4 slider buns
  • 4 tsp cocktail sauce
  • 4 bibb lettuce leaves

Instructions
 

  • Combine mayo, onion and pickle along with 1/4 tsp pepper in a small bowl. Cover and refrigerate until ready to serve.
  • Spread panko in a shallow dish. Pulse 1/3 of shrimp, Old Bay, remaining 1 tbsp of mayo. and remaining 1/4 tsp pepper in a food processor, 4 times. Add remaining shrimp to food processor to food processor and pulse until coarsely chopped, about 6 times. Transfer to a bowl.
  • Divide shrimp mixture into 4 equal portions and shape into patties. Dredge patties 1 at a time on both sides and transfer to a plate. Toast buns and set aside.
  • Line a plate with paper towels. Heat oil in a 10" nonstick skillet over medium heat until shimmering. Place patties in skillet and cook until golden brown on first time, 2-4 minutes. Flip patties and continue to cook until patties register 145' on second side, 2-4 more minutes. Transfer patties to paper towel lined plate and let drain.
  • Spread tartar sauce on bun bottom and cocktail sauce on top bun. Place shrimp patty on top of tartar sauce. Top with lettuce and cover with bun top. Serve.
