Ingredients
  

  • 1/2 lb carrots
  • 1/4 cup dry roasted peanuts-chopped
  • 1/4 cup fresh mint-chopped
  • 1/4 cup cilantro-chopped
  • 1/2-1 serrano pepper-seeded, sliced thin
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tsp lime zest from 1 lime
  • juice from 1 lime
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions
 

  • Peel carrots and shred. Add to a large bowl. Along with the mint, cilantro, and serrano pepper. Stir to combine.
  • In a small bowl whisk together fish sauce, sugar, sesame oil, lime zest and juice, garlic and salt.
  • Combine sauce with carrot mixture and stir until well combined. Let salad sit for 30 minutes, stirring occasionally to let flavors come together. You can also make this ahead and put in the fridge.
