Airfryer Gingerbread Bites

These airfryer gingerbread bites are so moist, flavorful and easy to make. A tasty treat to give and eat any time of the year.

Ingredients
  

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 2/3 cup hot water
  • 2 1/4 cup cake flour*
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 2 eggs-beaten

Instructions
 

  • Preheat airfryer to 320' on airfryer setting.
  • Grease your egg bite mold with cooking spray. Set aside.
  • In the bowl of the stand mixer cream butter. I left mine out overnight to speed up the process. Then gradually add in the brown sugar and molasses and continue beating, add the hot water and combine.
  • In another bowl or on parchment paper sift the flour, baking powder, baking soda, salt, cinnamon and ginger. I like using parchment paper because all of your dry ingredients make it into the stand mixer bowl instead of some on the counter.
  • Add the dry ingredients into your mixing bowl in 3 parts. Remember to scrape down the bowl after each addition.
  • Add the beaten eggs and beat to combine. Scrape the bowl between added ingredients to incorporate completely.
  • Pour the batter into your mold and fill it 2/3 full. Set the mold into the preheated airfryer and bake for about 14 minutes. I like to do a test run to make sure the time is correct. All ovens are different and if 14 minutes it too long or not long enough just adjust the time and make a note in your recipe.
  • Stick a toothpick in the center of 1 bite to see if it comes out clean. Let cool enough to unmold then plate and serve.
  • If making it for dessert or company I would add whipped cream or ice cream. A nice touch would be a glaze or just some powdered sugar.
  • This would be a great gift. Add a tea bag and mug and make someone's day!
