Grease your egg bite mold with cooking spray. Set aside.
In the bowl of the stand mixer cream butter. I left mine out overnight to speed up the process. Then gradually add in the brown sugar and molasses and continue beating, add the hot water and combine.
In another bowl or on parchment paper sift the flour, baking powder, baking soda, salt, cinnamon and ginger. I like using parchment paper because all of your dry ingredients make it into the stand mixer bowl instead of some on the counter.
Add the dry ingredients into your mixing bowl in 3 parts. Remember to scrape down the bowl after each addition.
Add the beaten eggs and beat to combine. Scrape the bowl between added ingredients to incorporate completely.
Pour the batter into your mold and fill it 2/3 full. Set the mold into the preheated airfryer and bake for about 14 minutes. I like to do a test run to make sure the time is correct. All ovens are different and if 14 minutes it too long or not long enough just adjust the time and make a note in your recipe.
Stick a toothpick in the center of 1 bite to see if it comes out clean. Let cool enough to unmold then plate and serve.
If making it for dessert or company I would add whipped cream or ice cream. A nice touch would be a glaze or just some powdered sugar.
