- 1 5 lb Pork butt boneless
- 3 Tbsp Kosher salt
- 3 Tbsp Brown sugar
- 1 Tsp Pepper
- 1 Cup Apple Cider or juice
- 1 Cup Apple butter-divided
- 3 Tbsp All-purpose flour
- 1 Onion-halved
- 4 Cloves Garlic-peeled and smashed
- 3 Sprigs Thyme
- 1 Tbsp Apple Cider vinegar
- 1/4 Cup Fresh chives-minced
Pat pork roast dry with paper towels and sprinkle with salt, pepper and sugar.
In the slow cooker liner whisk apple cider, 1/2 cup apple butter, and flour together. Add in onion, garlic, and thyme. Place roast fat side down in the liquid. Cover and cook on low 8 to 9 hours or on high for 6 to 7. If using the Instant Dutch Oven the slow cook function is the same as high on a standard slow cooker.
Transfer pork to carving board, fat side up, tented with foil. Let rest for 20 minutes.
While pork roast is resting skim the fat from the surface of the sauce. Discard onion and thyme.
Stir in the vinegar and the rest of the apple butter. Season with salt and pepper to taste.
Slice pork and place on your favorite serving platter or put back into gravy in the slow cooker. Sprinkle with chives. Serve. Serve additional gravy on the side.
