Applesauce Cake
Applesauce Cake is a delightful and moist dessert that has been loved by generations. The original recipe calls for simple ingredients such as flour, sugar, applesauce, spices, and a touch of oil or butter.

CAKE
- 2 1/2 Cups All-purpose flour
- 2 Tsp Baking powder
- 1 Tsp Baking soda
- 2 Tsp Cinnamon
- 1 Tsp Salt
- 1 Tsp Ground ginger
- 1/2 Tsp Ground nutmeg
- 1/8 Tsp Ground cloves
- 2 Cups Applesauce
- 16 Tbsp Butter-melted and cooled
- 1 Cup Brown sugar-packed
- 2 Eggs
- 1 Tbsp Vanilla
ICING
- 1 Cup Brown sugar-packed
- 6 Tbsp Butter
- 1/4 Cup Heavy cream
- 1/2 Tsp Table salt
- 3/4 Cup Powdered sugar-sifted
- 1 Cup Pecans-toasted
CAKE
Preheat oven to 350' and place the oven rack in the middle portion. Spray a 9X13 baking pan with cooking spray.
Whisk flour, baking powder, baking soda, cinnamon, salt, ginger, nutmeg and cloves in a medium bowl. Whisk applesauce, butter, sugar, eggs and vanilla together in a large bowl. Add flour mixture to applesauce mixture and stir to just combined.
Transfer batter to 9X13 pan and smooth top. Bake until top is golden brown and toothpick inserted in center comes out clean, 35 minutes.Rotate pan halfway through baking.
Cool on a wire rack completely, 2 hours.
ICING
Combine brown sugar, butter, cream and salt in a medium pan. Cook over medium heat. Whisking often, until large bubbles burst on the surface, 3-4 minutes. Remove from heat and let cool for 10 minutes.
Whisk in powered sugar and vanilla until smooth, about 1 minute.
Working quick spread icing over cake. Sprinkle pecans over icing. Serve
Store leftovers covered by plastic wrap for up to 3 days.
