Blueberry Shrub Drinking Vinegar
Blueberry shrub drinking vinegar can be used as a mixer in a cocktail. Looking for something non- alcoholic just add soda water.
- 6 oz fresh blueberries
- 3/4 cup granulated sugar
- 1/2 cup apple cider vinegar
In a medium bowl mash blueberries with a fork. Add sugar and stir. Cover bowl and leave at room temperature, stirring a couple of times. Leave out for about 24 hours until sugar is mostly dissolved and berries are very soft and juicy.
Strain fruit through a fine mesh strainer into a mason jar.
Add vinegar and stir. Taste and add more sugar or vinegar if needed.
The flavors combine as it sets. Put into the fridge. It keeps for about 6 months.
