Brown Sugar Peach Cake

Brown Sugar Peach Cake is incredibly versatile when it comes to serving. Enjoy it slightly warm with a dusting of powdered sugar, or add a scoop of vanilla ice cream for an extra indulgent treat.

Ingredients
  

CAKE

  • 1 15oz box yellow cake mix
  • 3 eggs-room temperature
  • 1/3 cup vegetable oil
  • 1/2 cup peach juice
  • 1 lb peaches-chopped

FROSTING

  • 1/2 cup butter-cut into pieces
  • 1/2 cup heavy cream
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 1/2 cups powdered sugar-sifted

Instructions
 

  • Preheat oven to 350' Lightly spray a 9x12 cake pan.
  • Mix cake mix, eggs, oil and juice together in your mixing bowl until well combined. Fold in peaches and spread batter in your greased pan.
  • Bake for 28 minutes or until a toothpick comes out clean.
  • In a saucepan add the butter, cream and brown sugar, bring to a boil, stirring constantly. Remove from heat and stir in vanilla and powdered sugar. Whisk until smooth and there are no lumps. Put back on low heat if needed.
  • Pour frosting over the cake until its evenly coated. Do this quickly as the frosting will harden and won't look smooth.
  • Let the frosting harden at room temperature or put in the fridge to speed up the process.
