CAKE

- 3 eggs-room temperature
- 1/3 cup vegetable oil
- 1/2 cup peach juice
- 1 lb peaches-chopped
FROSTING
- 1/2 cup butter-cut into pieces
- 1/2 cup heavy cream
- 1 cup brown sugar
- 1 tsp vanilla
- 2 1/2 cups powdered sugar-sifted
Preheat oven to 350' Lightly spray a 9x12 cake pan.
Mix cake mix, eggs, oil and juice together in your mixing bowl until well combined. Fold in peaches and spread batter in your greased pan.
Bake for 28 minutes or until a toothpick comes out clean.
In a saucepan add the butter, cream and brown sugar, bring to a boil, stirring constantly. Remove from heat and stir in vanilla and powdered sugar. Whisk until smooth and there are no lumps. Put back on low heat if needed.
Pour frosting over the cake until its evenly coated. Do this quickly as the frosting will harden and won't look smooth.
Let the frosting harden at room temperature or put in the fridge to speed up the process.
