Cacio e Pepe Cauliflower is a delicious and nutritious dish that is gaining popularity among food enthusiasts and health-conscious individuals. This dish is a creative twist on the classic Italian pasta recipe, Cacio e Pepe, which traditionally consists of pasta tossed in a simple sauce made of Pecorino Romano cheese and freshly ground black pepper.

Ingredients
  

  • 1 lg head cauliflower
  • 3 tbsp butter-melted
  • 2 tsp black pepper-divided
  • 2/3 cup Parmesan cheese-divided

Instructions
 

  • Preheat oven to 400'.
  • Cut cauliflower into bite size florets. Line a large rimmed baking sheet with foil. Arrange cauliflower on baking sheet and drizzle with melted butter and toss to coat. Sprinkle with 1 tsp. black pepper and 1/3 cup Parmesan cheese and toss again.
  • Roast cauliflower until crispy and browned for 25 minutes tossing halfway through.
  • Remove from oven and transfer to serving bowl. Sprinkle with remaining pepper and cheese and toss. Serve immediately.
  • This reheats perfectly in the air fryer.
