Cacio e Pepe Cauliflower

- 1 lg head cauliflower
- 3 tbsp butter-melted
- 2 tsp black pepper-divided
- 2/3 cup Parmesan cheese-divided
Preheat oven to 400'.
Cut cauliflower into bite size florets. Line a large rimmed baking sheet with foil. Arrange cauliflower on baking sheet and drizzle with melted butter and toss to coat. Sprinkle with 1 tsp. black pepper and 1/3 cup Parmesan cheese and toss again.
Roast cauliflower until crispy and browned for 25 minutes tossing halfway through.
Remove from oven and transfer to serving bowl. Sprinkle with remaining pepper and cheese and toss. Serve immediately.
This reheats perfectly in the air fryer.
