Cauliflower Oatmeal with Apples and Walnuts
Cauliflower Oatmeal with Apples and Walnuts is a surprisingly delicious and nutritious breakfast boost.

- 3 cups almond milk
- 3 cups riced cauliflower frozen
- 1/2 cup old fashioned oats
- 2 tbsp chia seeds
- 1 tsp vanilla
- 1/2 tsp cinnamon
- salt
- 1 tbsp olive oil
- 3 small gala apples-chopped
- 1/2 cup walnuts-chopped and toasted
- 1 tbsp maple syrup
- 1/4 tsp five spice powder
In a saucepan combine milk, cauliflower, oats, chia seeds and vanilla. Cook on medium low until most of liquid has absorbed, stirring occasionally. About 10-12 minutes. Remove from heat and stir in cinnamon and a pinch of salt.
Heat oil in a large skillet over medium heat, Add apples and cook for a couple of minutes. Add walnuts and toss to combine then cook for 2 more minutes. Remove from the heat and stir in maple syrup and five spice.
To serve divide oatmeal into 4 portions and top with apple mixture. Add more five spice and maple syrup if desired.
