Cauliflower Tacos
Cauliflower tacos puts a vegetarian spin on taco Tuesday. Roast the cauliflower in the oven and serve with a spicy slaw.

Cauliflower Tacos
- 2 tbsp olive oil
- 1 tbsp lime juice-plus wedges for garnish
- 1/2 tsp honey
- 1 tbsp tomato paste
- 1 tsp chili powder
- 1/2 tsp ground coriander
- 1/2 tsp cumin
- 1/8 tsp cayenne pepper
- salt to taste
- 1 medium head cauliflower
- 1 bell pepper
- 8 corn tortillas
Spicy Slaw
- 2 tbsp lime juice
- 2 tbsp Kewpie mayo
- 1/4 head purple cabbage
- 1 red bell pepper
- 1 jalapeno
- 1/4 cup cilantro plus garnish
Cauliflower Tacos
Preheat oven to 425' or if using the airfryer set to 400'.
In a large bowl whisk together oil, lime juice, honey, tomato paste, spices and 1/2 tsp. salt. Set aside.
Core cauliflower and cut into bite size florets. Slice bell pepper into strips. Add both cauliflower and bell pepper into bowl with sauce you set aside. Toss to coat.
Roast on baking sheet for 18-22 minutes until golden and tender. If using the airfryer check and rotate or shake so it doesn't burn.
Spoon cauliflower and peppers into tortillas and top with slaw. Serve with lime wedges and chopped cilantro.
Spicy Slaw
Whisk lime juice, mayo and 1/2 tsp. salt together in a large bowl. Set aside.
Slice cabbage, bell pepper and jalapeno very thin. Then add to sauce and toss to coat well. Taste and add more salt if needed.
Add in cilantro before serving.
