Cedar Plank Brie with Berries

- 1/2 cup blackberries
- 1/3 cup strawberries-sliced
- 1 1/2 tsp red wine vinegar
- 1 1/2 tsp sugar
- 1 1/2 tsp thyme-plus extra for garnish
- salt and pepper
- 1 8oz brie wheel
- 2 tbsp roasted salted almonds-chopped
- crackers-bread-fruit for serving
Place a cedar plank in a bowl or baking dish and soak for at least 1 hour. Preheat oven to 375' or grill to medium high.
In a medium bowl add blackberries and crush with a fork. Add strawberries, vinegar, sugar, thyme, big pinch salt and pinch of pepper. Stir, and let stand for 5 minutes.
Remove plank from water and let drain. To keep your oven clean I would put the plank on a rimmed cookie sheet.
Trim top off brie and place on top of cedar plank. Top brie with berry mixture, Reserve some of the juice for serving. Sprinkle the almonds on top of berries.
If using the grill place the plank right on the grill and close the lid. If using the oven put the cookie sheet into the oven. Cook about 11 minutes until brie is softened and warmed through.
Watch the last 2 minutes of cooking so the brie doesn't completely run out of the rind. Remove from the oven.
Drizzle the reserved berry juice over the top and garnish with the thyme leaves.
