Charred Peppers and Beans

- 5 tbsp olive oil-divided
- 1 1/2 tbsp lemon juice
- 1 tsp salt-divided
- 1/8 tsp cayenne pepper
- 1 150z can cannellini beans-drained and rinsed
- 3 red bell pepper-seeded and cut into strips
- 1 1/2 oz salami or prosciutto-sliced thin
- 1 oz Pecorino Romano cheese-shaved
- 1/4 cup almonds-toasted and chopped
- 1/4 cup parsley-chopped
Whisk 1/4 cup oil, lemon juice, 1/2 tsp.salt, paprika, and cayenne in a large bowl. Add beans and toss to combine.
Heat remaining oil in a 12" nonstick skillet over medium heat. Add peppers and rest of salt, cook, stirring every 2 minutes, until tender and brown. About 8 minutes total.
Transfer peppers to the bowl with the bean mixture. Toss to combine. Let sure for 30 minutes to allow flavors to combine. You can refrigerate for up to 2 days.
Before serving, add salami, cheese, almonds and parsley to the bean mixture, toss to combine. Season to taste with salt and pepper.
