Cheesy lasagna soup is a delectable twist on the classic Italian dish. It combines all the flavors of traditional lasagna in a warm and comforting soup form, making it the perfect meal for a cozy night in or a hearty family dinner.
In a medium bowl combine ricotta, Parmesan and 1/4 tsp. salt. Cover and put in fridge.
Heat oil in a Dutch oven over medium heat. Add beef, breaking up as it cooks, until browned, about 3-5 minutes. Remove beef with a slotted spoon and place on a paper towel lined plate.
Add onion to Dutch oven with the fat left in and cook until softened, about 5 minutes. Add garlic cook and stir constantly, about 1 minute. Stir in tomatoes and broth, bring to a boil over high heat. Stir in sugar and remaining salt.
Add lasagna noodles pieces and cook until al dente, about 8 minutes. Stir in cooked ground beef and cook for a couple minutes. Remove from heat and stir in vinegar.
Ladle soup into bowls and top with shredded mozzarella and dollops of ricotta mixture. Top with basil and serve.
