Ingredients
  

  • 4 oz bacon-garnish
  • 1 Tbsp olive oil
  • 1 onion-chopped
  • 1 yellow bell pepper-finely diced
  • 4 jalapenos-seeded and finely diced
  • 4 cloves garlic-minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups almond milk
  • 4 oz cream cheese-room temperature and cut into pieces
  • 2 cups rotisserie chicken
  • 1 cup cheddar cheese-shredded for garnish
  • pickled jalapenos-garnish

Instructions
 

  • Over medium heat cook bacon in a Dutch oven until crisp. Transfer bacon to paper towel lined plate. Leave the bacon grease in the Dutch oven.
  • Cook the onions, peppers and jalapenos in the bacon grease along with 1/2 tsp. salt over medium heat covered. Stirring occasionally until tender, about 6 minutes.
  • Stir in garlic and cook for 2 minutes. Add flour and cook for 1 minute, stirring constantly. Whisk in broth, then milk. Bring to a boil, reduce heat to simmer until thickened, 10-12 minutes.
  • Stir in cream cheese until melted and add in chicken, simmer until chicken is heated through.
  • Serve with cheese, jalapenos and bacon.
