Chicken Jalapeno Popper Soup

- 4 oz bacon-garnish
- 1 Tbsp olive oil
- 1 onion-chopped
- 1 yellow bell pepper-finely diced
- 4 jalapenos-seeded and finely diced
- 4 cloves garlic-minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups almond milk
- 4 oz cream cheese-room temperature and cut into pieces
- 2 cups rotisserie chicken
- 1 cup cheddar cheese-shredded for garnish
- pickled jalapenos-garnish
Over medium heat cook bacon in a Dutch oven until crisp. Transfer bacon to paper towel lined plate. Leave the bacon grease in the Dutch oven.
Cook the onions, peppers and jalapenos in the bacon grease along with 1/2 tsp. salt over medium heat covered. Stirring occasionally until tender, about 6 minutes.
Stir in garlic and cook for 2 minutes. Add flour and cook for 1 minute, stirring constantly. Whisk in broth, then milk. Bring to a boil, reduce heat to simmer until thickened, 10-12 minutes.
Stir in cream cheese until melted and add in chicken, simmer until chicken is heated through.
Serve with cheese, jalapenos and bacon.
