Chilaquiles Verdes

Ingredients
  

  • 2 Tbsp Olive oil
  • 1 Onion-chopped
  • 2 Cloves Garlic-minced
  • 2 Cups Salsa verde-homemade or store bought
  • 1 Small Can green enchilada sauce or homemade
  • 1/4 Cup Green chiles-chopped
  • 2 Cups Cooked chicken or turkey
  • Tortilla chips or leftover tostada shells
  • Queso fresco or cotija cheese
  • 4 Eggs
  • Fresh tomatoes chopped-garnish
  • Pickled jalapeƱos-garnish
  • Limes quartered-garnish
  • Chopped cilantro-garnish
  • Sliced radish-garnish
  • Sour cream or Greek plain yogurt-garnish
  • Sliced avocado or guacamole

Instructions
 

  • Prep all your garnishes to have ready to top your chilaquiles.
  • Heat oil in a large skillet and cook onions for 6 minutes then add the garlic and cook for 1-2mintues. Add the enchilada sauce, 1 cup salsa, green chiles, and cooked chicken to the skillet.
  • While the sauce is cooking fry an egg for each serving. Keep warm until ready to serve.
  • Add your tortilla chips and cotija cheese to the skillet and toss carefully to coat. Once heated through serve with a fried egg on top. Add whatever garnishes you like and enjoy!
