- 2 Tbsp Olive oil
- 1 Onion-chopped
- 2 Cloves Garlic-minced
- 2 Cups Salsa verde-homemade or store bought
- 1 Small Can green enchilada sauce or homemade
- 1/4 Cup Green chiles-chopped
- 2 Cups Cooked chicken or turkey
- Tortilla chips or leftover tostada shells
- Queso fresco or cotija cheese
- 4 Eggs
- Fresh tomatoes chopped-garnish
- Pickled jalapeƱos-garnish
- Limes quartered-garnish
- Chopped cilantro-garnish
- Sliced radish-garnish
- Sour cream or Greek plain yogurt-garnish
- Sliced avocado or guacamole
Prep all your garnishes to have ready to top your chilaquiles.
Heat oil in a large skillet and cook onions for 6 minutes then add the garlic and cook for 1-2mintues. Add the enchilada sauce, 1 cup salsa, green chiles, and cooked chicken to the skillet.
While the sauce is cooking fry an egg for each serving. Keep warm until ready to serve.
Add your tortilla chips and cotija cheese to the skillet and toss carefully to coat. Once heated through serve with a fried egg on top. Add whatever garnishes you like and enjoy!
