Chinese Chicken Salad

SALAD
- 3 Cups Cooked chicken or rotisserie chicken
- 1 Head Napa cabbage-6cups, chopped
- 2 Cups Romaine lettuce-chopped
- 1/2 Head Red cabbage-3 cups, shredded
- 1 Cup Carrots, matchstick or shredded
- 1 Cup Snow peas-julienned
- 1 Cup Mandarin oranges
- 1/3 Cup Cilantro-chopped
- 1/3 Cup Scallions-chopped
- 1/2 Cup Craisins
- 2/3 Cup Sliced almonds
- 2 Tbsp Sesame seeds
- 1/2 Cup Edamame-shelled
- 1 Cup Wonton strips
DRESSING
- 1/3 Cup Rice vinegar
- 1/4 Cup Soy sauce
- 2 Tbsp Sweet chili sauce
- 1 1/2 Tbsp Sesame oil
Add all dressing ingredients to a jar and shake until well blended. Or use your favorite bottled Asian dressing. Remove 3 tablespoons to marinate the chicken. Store the rest of the dressing in the fridge until ready to use. Toss the chicken to coat.
Put all salad ingredients in a large bowl except wonton strips. Toss desired amount of dressing with salad to coat. Add wonton strips and serve.
