Cinnamon Coffee Cake

Filling and Streusel
- 3/4 cup brown sugar
- 1 tbsp cinnamon
- 1/2 tsp table salt
- 1/2 cup all-purpose flour
- 4 tbsp butter-melted
Cake
- 2 1/4 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 1 1/4 tsp baking soda
- 1/2 tsp baking soda
- 3/4 tsp table salt
- 1 cup almond milk or whole milk
- 1 egg
- 1 egg yolk
- 2 tsp vanilla extract

Filling and Streusel
Preheat the oven to 350 degrees and place the oven rack in the middle position
Spray your 8" square baking pan with cooking spray.
Combine brown sugar, cinnamon, and salt in a medium bowl. Reserve 1/4 cup brown sugar mixture for the filling.
Stir flour into remaining brown sugar mixture. Add melted butter and mix until clumps. Set aside.
Cake
Whisk flour, sugar, baking powder, baking soda and salt in a large bowl. Stir in milk, butter, eggs and vanilla until just combined.
Pour 2 1/4 cups of batter into pan and spread evenly. Sprinkle 1/4 cup reserved brown sugar mixture evenly over batter. Dollop the rest of the batter evenly over the brown sugar filling and spread evenly.
Crumble streusel and spread it evenly on top of the batter.
Bake until the center of the cake is set and a toothpick comes out with a few crumbs attached. About 45-50 minutes.
Leave cake to cool in the pan on a wire rack for 30 minutes. Cut into 9 squares and serve warm.
Store leftovers in an airtight container.
