Collard Greens
Collard greens are a timeless comfort food, especially in Southern cooking, where they have long been a staple at family dinners and holiday gatherings.

- 2 bunches collard greens
- 2 ham hocks, 1.5 cups ham or 6 strips of bacon
- 2 cups chicken broth
- 2 tbsp red wine vinegar
- 2 tbsp honey
- 1 1/2 tsp Cajun seasoning-add more if needed
- 1 tbsp salt
- 2 tsp black pepper
- water if needed
Place the greens and meat in a large pot or Dutch oven. Add everything else and give it a good stir.
Bring to a boil. Reduce heat to low and simmer for 1 hour. Taste to see how tender they are. If needed cook for longer.
Add more honey if you need it sweeter. Serve!
