Edamame Salad-Mint and Parmesan

- 3 Tbsp Olive oil
- 2 Tbsp Dehydrated onion
- 1 Tbsp Lemon juice
- 1 Clove Garlic-grated
- 1/2 Tsp Salt-plus more for boiling edamame
- 1/2 Tsp Black pepper
- 2 Cups Edamame shelled-frozen
- 1/2 Cup Parmesan cheese-shredded
- 1/3 Cup Mint-coarsley chopped
- 1/4 Cup Parsley-chopped
Combine oil, onion, lemon juice, garlic, salt and pepper in a large bowl, set aside.
Bring 1 quart water to a large saucepan over high heat. Fill a large bowl with ice water. Line a large plate with paper towels.
Add 1 tablespoon salt and edamame to the boiling water and cook for 5 minutes. Drain edamame into a colander and then nestle colander in the bowl of ice water. Let sit in water for 5 minutes.
Drain edamame and spread out on the paper towel lined plate. Pat dry with additional paper towels.
Add edamame to the bowl with the dressing and toss to coat. Add Parmesan, mint and parsley and toss to combine. Season with salt and pepper to taste. Serve.
