To your blender add the egg bite ingredients. Blend until smooth, 30-40 seconds.
Spray a 12 cup muffin tin with cooking spray. Pour egg bite mixture into the muffin tins.
Add the toppings to each muffin cup and stir. Place muffin tin onto a deep baking sheet.
Cover with foil and place in the oven.
Pour boiling water into the baking sheet and comes halfway up the muffin tin.
Bake until the eggs are set in the middle, 30-35 minutes.
Turn off the oven with the door ajar and let egg bites rest for 10 minutes. Let cool on a wire rack. Unmold, using a knife to run around the edge of the muffin tin.
Enjoy while warm.
Refrigerate leftovers and to reheat put in the microwave for about 1 minute. Freeze leftovers.
