Egg Bites

Ingredients
  

EGG BITES

  • 7 Eggs
  • 3/4 Cup Cottage cheese
  • PInch Salt and pepper

TOPPINGS

  • Bacon bits
  • Cheddar cheese-shredded
  • Chives-chopped

Instructions
 

  • Preheat oven to 325'.
  • To your blender add the egg bite ingredients. Blend until smooth, 30-40 seconds.
  • Spray a 12 cup muffin tin with cooking spray. Pour egg bite mixture into the muffin tins.
  • Add the toppings to each muffin cup and stir. Place muffin tin onto a deep baking sheet.
  • Cover with foil and place in the oven.
  • Pour boiling water into the baking sheet and comes halfway up the muffin tin.
  • Bake until the eggs are set in the middle, 30-35 minutes.
  • Turn off the oven with the door ajar and let egg bites rest for 10 minutes. Let cool on a wire rack. Unmold, using a knife to run around the edge of the muffin tin.
  • Enjoy while warm.
  • Refrigerate leftovers and to reheat put in the microwave for about 1 minute. Freeze leftovers.
