Farro Spinach Grain Bowl

Ingredients
  

Grain Bowl

  • Salt for cooking farro
  • 1/2 Cup Farro
  • 12 Brussel sprouts-halved
  • 4 Carrots-chopped
  • 1 Shallot- sliced
  • 2 Tbsp Olive
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 2 Big handfuls Spinach
  • 2 Hard boiled eggs
  • Chopped Parsley-garnish

Tahini Sauce

  • 1 Clove Garlic
  • Salt
  • 1/4 Cup Tahini
  • 1 1/2 Tbsp Lemon juice
  • 2 Tsp Honey
  • Pepper
  • 2 Tbsp Water

Instructions
 

Grain Bowl

  • Preheat oven to 425
  • Bring a pot of salted water to boil. Add Farro and cook according to package directions.
  • On a rimmed baking sheet, combine Brussel sprouts, carrots, and shallots. Drizzle with olive oil and season with salt and pepper. Toss well. Roast vegetables turning a couple during cooking. Roast until tender and browned. About 30-40 minutes.

Tahini Sauce

  • Use salt to crush the garlic in a paste. Transfer to a small bowland whisk in tahini, lemon juice, honey and pepper. Stir continuously while adding in the water. Mix until dressing is smooth and pourable.
  • Drain farro and add to each bowl. Arrange vegetables on top of Farro then add spinach. Cut eggs in half, season with salt and pepper then add to bowl.
  • Drizzle tahini dressing over the bowl ingredients and top with parsley.
