Farro Spinach Grain Bowl

Grain Bowl
- Salt for cooking farro
- 1/2 Cup Farro
- 12 Brussel sprouts-halved
- 4 Carrots-chopped
- 1 Shallot- sliced
- 2 Tbsp Olive
- 1/2 Tsp Salt
- 1/4 Tsp Pepper
- 2 Big handfuls Spinach
- 2 Hard boiled eggs
- Chopped Parsley-garnish
Tahini Sauce
- 1 Clove Garlic
- Salt
- 1/4 Cup Tahini
- 1 1/2 Tbsp Lemon juice
- 2 Tsp Honey
- Pepper
- 2 Tbsp Water
Grain Bowl
Preheat oven to 425
Bring a pot of salted water to boil. Add Farro and cook according to package directions.
On a rimmed baking sheet, combine Brussel sprouts, carrots, and shallots. Drizzle with olive oil and season with salt and pepper. Toss well. Roast vegetables turning a couple during cooking. Roast until tender and browned. About 30-40 minutes.
Tahini Sauce
Use salt to crush the garlic in a paste. Transfer to a small bowland whisk in tahini, lemon juice, honey and pepper. Stir continuously while adding in the water. Mix until dressing is smooth and pourable.
Drain farro and add to each bowl. Arrange vegetables on top of Farro then add spinach. Cut eggs in half, season with salt and pepper then add to bowl.
Drizzle tahini dressing over the bowl ingredients and top with parsley.
