Ingredients
  

  • 3 Tbsp Olive oil
  • 1 Tbsp Lemon juice
  • 2 Cloves Garlic-minced
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 2 Zucchini-peeled into ribbons
  • 4 Oz Cherry tomatoes-quartered
  • 4 Oz Feta-cut into small cubes
  • 1/2 Cup Kalamata olives-halved
  • 1/2 Cup Pepperoncini-sliced
  • 1/4 Cup Parsley-chopped
  • 2 Tbsp Dill- chopped

Instructions
 

  • Whisk oil, lemon juice, garlic, salt and pepper in a large bowl.
  • Add zucchini, tomatoes, feta, olives, pepperoncini, parsley, dill and toss evenly until combined.
