- Cooking spray
- 2 Tbsp Olive oil
- 3/4 Cup Onion-chopped
- 3 Cloves Garlic-minced
- 2 Cups Cauliflower rice
- 1 Cup Monterey jack cheese-shredded
- 1 Cup Sharp cheddar cheese-shredded
- 4 Oz Canned green chiles-chopped
- 1/2 Cup Greek yogurt-plain
- 1/2 Cup Milk-I used almond
- 1 1/2 Tsp Salt
- 1/2 Tsp Black pepper

- Shredded chicken
Spray 8x8 casserole dish with cooking spray. Preheat oven to 325'
Cook frozen cauliflower rice according to package directions. Discard any liquid. Set aside.
Heat olive oil in sauté pan over medium heat and add onions. Cook for 5 minutes then add garlic and cook for 1 more minute. Turn heat down to medium low and add milk, stirring constantly until reduced by half. Set aside.
In a large bowl combine rice, 1/2 cup of each cheese, chiles, yogurt, veggies, and seasonings. Stir well to incorporate all ingredients. Spread mixture into prepared dish and top with remaining cheese.
Bake at 325' for 25 minutes. Let stand for 5 minutes before serving.
