Homemade Mexican Chorizo

- 3 Tbsp Vegetable oil
- 2 Tbsp Ancho chile powder
- 2 Tbsp Paprika
- 1 Tbsp Ground coriabder
- 1 Tbsp Dried oregano
- 1 1/2 Tsp Salt
- 1 Tsp Black pepper
- 1/2 Tsp Cinnamon
- 1/4 Tsp Cayenne pepper
- 1/4 Tsp Allspice
- 6 Tbsp Cider vinegar
- 1 Tbsp Sugar
- 2 Cloves Garlic-minced
- 1 Lb Ground pork
Combine oil through allspice in a 12" non-stick skillet. Cook over medium heat, stirring constantly, until mixture is bubbly and fragrant.
Remove from heat and stir in vinegar, sugar and garlic. Let stand and cool for 5 minutes.
Add pork to skillet over medium heat, mash and stir until spice mixture is completely incorporated. Break up pork into small crumbles and mixture starts to bubble, about 3-5 minutes.
