Quick and tasty which makes it the perfect meal for a busy weeknight. These ribs will transport you to the islands. The pineapple, ginger, and hoisin are what gives this dish it's island flavor.
Place the ribs (cut excess fat off ribs), garlic and onion in the Instant Pot. Spoon half the pineapple and juice over the ribs. Keep the remaining pineapple with juice for the sauce.
Set the Instant Pot for 40 minutes. It takes about 15 minutes for the pot to come to pressure.
While ribs are cooking, mix the ketchup, brown sugar, hoisin, ginger and the remaining pineapple with juice in a small bowl. Set aside.
When the Instant Pot beeps let it naturally release for 15 minutes. Release the balance of the pressure manually. Set your oven to broil.
Remove the ribs from the pot and place on a cookie sheet covered with aluminum foil. The foil helps make clean up easier. Spoon sauce over the ribs and put under the broiler for several minutes then turn and sauce again. Put back under the broiler to your desired caramelization.
Serve with extra sauce, rice and broccoli.
