Italian Sausage with Farro and Kale
Italian Sausage with Farro and Kale is a delectable dish that brings together the flavors of sausage, nutty farro and earthy kale.

- 1 cup farro
- 1/4 cup olive oil
- salt for cooking farro
- 10 oz kale-stemmed and chopped
- 2 apples-cored and chopped
- 1 red onion-chopped
- 1 1/2 tsp fresh rosemary-chopped
- 1/2 tsp black pepper
- 3/4 cup pecans-chopped and toasted
- 1/4 cup golden raisins
Combine farro and 1 tablespoon of oil in a large pot. Cook over medium high heat, stirring frequently, for 6 minutes. Add 2 quarts of water and 1 tablespoon of salt, bringing to a boil. Reduce to medium and simmer until farro is tender with a slight chew, 10-20 minutes. Add kale and cook for 2 more minutes. Drain.
Add the sausages to a non-stick skillet with 1 tablespoon of oil. Cover and cook over medium heat, flipping evert 2 minutes watching to make sure sausages don't get burnt. Temperature should be 160'. Remove from skillet and tent with foil.
Add apples, onion, rosemary and pepper to remaining fat in skillet. Cook over medium heat until softened and beginning to brown, about 6 minutes. Stir in the farro mixture, pecans and raisins. Add remaining oil and cook until heated through.
Taste for seasoning and add additional salt and pepper if needed. Slice sausage and serve over the farro/kale mixture.
