Italian Sausage with Farro and Kale

Italian Sausage with Farro and Kale is a delectable dish that brings together the flavors of sausage, nutty farro and earthy kale.

Ingredients
  

  • 1 cup farro
  • 1/4 cup olive oil
  • salt for cooking farro
  • 10 oz kale-stemmed and chopped
  • 2 apples-cored and chopped
  • 1 red onion-chopped
  • 1 1/2 tsp fresh rosemary-chopped
  • 1/2 tsp black pepper
  • 3/4 cup pecans-chopped and toasted
  • 1/4 cup golden raisins

Instructions
 

  • Combine farro and 1 tablespoon of oil in a large pot. Cook over medium high heat, stirring frequently, for 6 minutes. Add 2 quarts of water and 1 tablespoon of salt, bringing to a boil. Reduce to medium and simmer until farro is tender with a slight chew, 10-20 minutes. Add kale and cook for 2 more minutes. Drain.
  • Add the sausages to a non-stick skillet with 1 tablespoon of oil. Cover and cook over medium heat, flipping evert 2 minutes watching to make sure sausages don't get burnt. Temperature should be 160'. Remove from skillet and tent with foil.
  • Add apples, onion, rosemary and pepper to remaining fat in skillet. Cook over medium heat until softened and beginning to brown, about 6 minutes. Stir in the farro mixture, pecans and raisins. Add remaining oil and cook until heated through.
  • Taste for seasoning and add additional salt and pepper if needed. Slice sausage and serve over the farro/kale mixture.
