Ingredients
  

  • 4 Eggs
  • 1 Tbsp Milk or almond milk
  • 1/4 Tsp Salt
  • 1 Tbsp Olive oil
  • Salt and pepper
  • 1 Bunch Kale-leaves stripped, use frozen if that's all you have
  • 1/2 Cup Roasted red pepper
  • 1/4 Cup Goat cheese-crumbled
  • Chopped chives-garnish

Instructions
 

  • Cut kale into 1" strips. Heat oil in a non stick skillet and cook kale for 3 minutes. Season with salt and pepper to taste.
  • Spray a round 6" cake pan generously with cooking spray.
  • Whisk eggs, milk, and salt in a medium bowl. Stir in kale, red pepper and goat cheese.
  • Pour egg mixture into prepared pan and place in airfryer. Set airfryer to 350' and cook frittata for 25 minutes until golden brown. Internal temp should be 180'.
  • Transfer pan to wire rack and rest for 5 minutes.
  • Cut into slices and serve. Garnish with chives.
