Kale Goat Cheese Frittata-Airfryer

- 4 Eggs
- 1 Tbsp Milk or almond milk
- 1/4 Tsp Salt
- 1 Tbsp Olive oil
- Salt and pepper
- 1 Bunch Kale-leaves stripped, use frozen if that's all you have
- 1/2 Cup Roasted red pepper
- 1/4 Cup Goat cheese-crumbled
- Chopped chives-garnish
Cut kale into 1" strips. Heat oil in a non stick skillet and cook kale for 3 minutes. Season with salt and pepper to taste.
Spray a round 6" cake pan generously with cooking spray.
Whisk eggs, milk, and salt in a medium bowl. Stir in kale, red pepper and goat cheese.
Pour egg mixture into prepared pan and place in airfryer. Set airfryer to 350' and cook frittata for 25 minutes until golden brown. Internal temp should be 180'.
Transfer pan to wire rack and rest for 5 minutes.
Cut into slices and serve. Garnish with chives.
