Kimchi Fried Rice

- 2 tbsp vegetable oil
- 1/2 lb ham-cubed small
- 1 onion-chopped
- 1 1/4 cups kimchi-sliced
- 1/4 cup kimchi juice
- 1/4 cup water
- 4 tsp soy sauce
- 4 tsp gochujang paste
- 1/2 tsp pepper
- 3 cups cauliflower or white rice
- 4 tsp sesame oil
- 1 tbsp sesame seeds-toasted
- 1 cup broccoli florets
- 1/2 cup frozen peas
- chopped cilantro-garnish
- fried egg-garnish
Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add onion and cook for 5 minutes, stirring occasionally, until softened. Add broccoli and cook for 5 minutes, then add ham and continue cooking for 2 more minutes.
Stir in kimchi, kimchi juice, water. soy sauce. gochujang and pepper. Cook, stirring until kimchi softens, 4-6 minutes.
Add rice and peas folding them in until evenly coated. Stir in sesame oil and remaining vegetable oil. continue cooking for 4 minutes.
Sprinkle with sesame seeds and top with fried egg and cilantro.
