Leftover Steak Green Chile
Leftover steak green chile is a delicious and versatile dish that can be enjoyed in various ways. This rich and flavorful dish is made by using leftover cooked steak, which adds a delightful smoky and savory taste to the green chile.

- 3 Cups Leftover steak-cubed
- 1 Onion-cut in half and sliced
- 1/2 Cup Beef broth
- 1/4 tsp Cumin
- 1/2 tsp Red chili powder
- 2 Cloves Garlic cloves
- 1 Can 4oz green chiles-chopped
- 1 Tbsp Olive oil
- 2 Tbsp Flour
- 1 Cup Beef broth-more if needed
- Salt and pepper to taste
- 10" flour tortillas
- Quesadilla cheese or whatever you have on hand
Garnish
- Chopped tomatoes
- JalapeƱos
- Sliced lettuce
- SAlsa
- Sour cream or Greek
- Sliced radish
- Cilantro
- Lime wedges
Add steak, onions, and 1/2 cup beef broth to a crockpot. Cook on high for 4 hours until the beef is tender.
In a large skillet heat olive oil over medium heat then add flour and cook until it turns a medium brown.
Whisk in 1 cup of beef broth until it thickens. Add in cumin, chili powder, garlic, green chilis, salt and pepper. Add the crockpot ingredients to the skillet and cook until thick and the flavors meld. About 20 minutes. Add more broth if needed.
Warm tortillas and add your green chile filling. Add your cheese and roll.
