Lemony Thyme Glazed Salmon
Lemony Thyme Glazed Salmon is an exquisite dish that combines the succulent flavors of fresh salmon with the zesty tang of lemon and the earthy aroma of thyme.

Salmon
- 1/4 Cup Table salt
- 1/4 Cup Sugar
- 4 6oz Salmon filets
- 1/2 Tsp Vegetable oil
- 1 Tbsp Parsley-minced
Lemon Thyme Glaze
- 1/4 Cup Lemon juice
- 3 Tbsp Water
- 2 Tbsp Sugar
- 4 Tsp Soy sauce
- 1 1/2 Tsp Cornstarch
- 6 Sprigs Thyme
Preheat oven to 300'
Dissolve salt and sugar in 2 quarts of water in a large container to brine salmon. Let sit in the brine at room temperature for 15 minutes. Remove salmon from brine and pat dry with paper towels.
While salmon is brining make the glaze.
Combine all the glaze ingredients excep thyme together in a small saucepan. Cook over medium low heat, stirring constantly until thickened. Add thyme and cook for 3 minutes. Remove from heat and set aside. Remove thyme sprigs before serving.
Take 2 tablespoons of the glaze and set aside.
Heat a 12" non-stick ovensafe skillet over medium high heat until it begins to smoke. Place salmon flesh side down in the skillet until browned, 2-3 minutes.
Flip salmon and reduce heat to low. Brush the salmon with the reserved glaze.
Transfer skillet to the oven and cook until the salmon registers 125' mid rare to 130', 10-12 minutes.
Using a clean brush, brush the rest of the glaze onto the salmon and sprinkle with parsley. Serve.
