Moo Shu Pancakes
Moo shu pancakes are one of my favorite things to order in a Chinese restaurant. A cross between a crepe and a tortilla.

Cuisine Chinese
- 2 cups all-purpose flour
- 1/4 tsp salt
- 3/4 cup boiling water
- 1 tbsp sesame oil
Place flour and salt in a large bowl and stir. Pour in the water. and stir with a fork. If the dough is crumbly add a little more water. Once the dough starts to come together and it's cool enough, knead the dough in the bowl. Move to a board or your counter and knead for a couple more minutes, until dough is smooth and elastic.
Roll dough into a foot long rope and cut into 12 pieces. Be mindful to keep the pieces the same size so they will roll out well. Roll each piece into a ball and flatten slightly.
Brush 1 side of each flattened dough piece with sesame oil. Place the oiled sides together and press to a 3" circle. Using a rolling pin roll out to a 7" circle aiming for as nice a circle as you can. Repeat making 6 pancakes.
Heat a non stick or seasoned cast iron skillet over medium-low heat and cook for a minute until top is bubbly. Flip over and cook for another minute. Remove to a plate and continue cooking the rest of the pancakes. Pull apart the pancakes to magically make 2 super thin pancakes. Watch out for the steam.
Serve with plum sauce and pork filling.
