Moo Shu Pork

Moo shu pork stir fried with thin sliced pork, kale, egg and cabbage in a thick savory sauce. Fill homemade moo shu pancakes with this deliciousness.

Ingredients
  

  • 1 ½ lb pork chops-sliced thin
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 eggs-beaten
  • 3 cups kale-chopped
  • 1 ½ tbsp ginger-grated
  • 3 tbsp soy sauce
  • 2 ½ tbsp hoisin sauce
  • 1 ½ tsp sesame oil
  • 3/4 tbsp honey
  • 3/4 tbsp cornstarch
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup green onions-sliced into 1/2" pieces

Instructions
 

  • In a large skillet over medium-low heat melt butter, then pour in beaten eggs. Cook for a couple of minutes, flip and continue cooking about 1-2 minutes, transfer to a plate to cool.
  • Add olive oil to the skillet, then cook the pork, salt and pepper until pork is browned but not overcooked. Transfer pork to a bowl and set aside.
  • Add cabbage to skillet and stir-fry for 3 minutes, then add kale, garlic and ginger. Stir-fry for 2 more minutes.
  • Add cornstarch and 1 tablespoon of water to a bowl and whisk until combined. Add the soy sauce, hoisin sauce, sesame oil and honey and whisk until well combined. Set aside.
  • Slice the egg into stripes 2"x1/4". Then add the eggs and pork back into the skillet with the cabbage. Toss carefully and well until combined.
  • Whisk the sauce before pouring over the mixture in the skillet. Toss carefully until well combined. Cook until sauce has thickened.
  • Turn off the heat and stir in the green onions. Serve with Moo Shu Pancakes and plum sauce.
