Overnight Growing Oatmeal
Overnight Growing Oatmeal is a great way to start your day. Make it the night before and grab it on your way out the door. It's great hot or cold.

- 1 1/4 Cups Almond milk-unsweetened
- 1 1/4 Cups Water
- 1/2 Cup Old fashioned oats
- 2 Tsp Monkfruit or no calorie sweetener
- 1/4 Tsp Vanilla
- Pinch Salt
TOPPINGS
- Fresh fruit
- Greek yogurt
- Nuts
- Cinnamon
- Chia seeds
- Jam
In a pot combine all ingredients and stir well.
Bring to a boil and reduce to a simmer. Cook and stir until creamy and thickened, about 15 minutes. It week thicken more as it sits in the fridge.
Transfer to your container and let cool completely. Then put in the fridge for at least 5 hours.
Mix well before serving. Heat if you prefer.
Top with your favorite toppings and serve.
