Ingredients
  

FILLING

  • 6 large fresh peaches pealed, pitted, and sliced (about 5–6 cups)
  • 1 tbsp cornstarch
  • 1/3 cup granulated sugar
  • 1 small lemon juiced
  • 1 tsp ground cinnamon

BATTER

  • 1/2 cup butter melted
  • 1 1/3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

Instructions
 

  • Preheat the oven to 350°F. Lightly coat a 9x13-inch baking dish with cooking spray and set aside.
  • In a medium bowl, combine the sliced peaches, cornstarch, 1/3 cup granulated sugar, lemon juice, and cinnamon. Gently toss to coat, then let the peaches rest while you prepare the batter.
  • Pour the melted butter evenly into the bottom of the prepared baking dish.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and 1 cup granulated sugar. Add the milk, egg, vanilla extract, and almond extract and whisk just until the batter is smooth and combined.
  • Carefully pour the batter evenly over the melted butter. Do not stir.
  • Give the peaches a gentle stir, then spoon them and their juices evenly over the batter. Do not stir.
  • Bake for about 40 minutes, or until the cobbler is puffed and golden and the peach filling is bubbling around the edges.
  • Let the cobbler rest for 10–15 minutes before serving. Serve warm, with vanilla ice cream if desired.

Notes

Use ripe but firm peaches for the best flavor and texture.
If the peaches are especially juicy, let the cornstarch mixture sit for a few minutes before assembling the cobbler.
Do not stir the batter into the melted butter or the peaches into the batter—the layers will come together as the cobbler bakes.
Let the cobbler rest for 10–15 minutes after baking so the peach juices have time to thicken slightly.
Serve warm with vanilla ice cream or whipped cream, if desired.
