Pork Chops Cherry Sauce

- 2 lbs sweet potatoes-peeled and sliced thin
- 1 cup chicken broth-divided
- 7 tbsp butter-divided
- 2 tsp salt-divided
- 1 3/4 tsp black pepper
- 4 pork chops-bone in 1" thick
- 1/4 tsp pumpkin pie spice
- 1 tsp cornstarch
- 8 oz frozen sweet cherries-quartered
- 1/4 cup bourbon
- 1 tbsp orange marmalade
Combine potatoes with 1/2 cup chicken broth, 4 tablespoons butter, 3/4 teaspoons salt, and 1/2 teaspoon pepper in a large saucepan. Cover and cook over medium heat until potatoes are tender, about 20 minutes. Check to make sure they are cooked and then process with an immersion blender, until smooth.
While potatoes are cooking pat pork dry with paper towels. Sprinkle with pumpkin pie spice, 1 teaspoon salt and 1 teaspoon pepper. In a 12" nonstock skillet melt 1 tablespoon butter over medium heat and cook about 6 minutes per side until browned. Temp should register 140'. Transfer to a platter and tent with foil.
Whisk cornstarch with remaining chicken broth until combined. Combine marmalade. cherries, bourbon, chicken broth mixture, remaining salt and pepper in empty skillet. Bring to a simmer over medium heat, cook stirring constantly until mixture thickens and becomes translucent, about 3 minutes. remove from heat and stir in remaining butter.
Serve pork chops over sweet potatoes and top with sauce.
