Pork Chops with Mango Salsa

Pork Chops
- 2 pork chops-used bone in 3/4" thick
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp pepper
- 1/4 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp brown sugar
- 1/2 tsp salt
- big pinch cayenne pepper
- olive oil-cook pork
Mango Salsa
- 1 ripe mango-diced
- 1 cup grape tomatoes-chopped
- 1 jalapeno-diced small
- 1/4 red onion-diced small
- 1/2 cup cilantro-chopped
- 1 tsp lime juice
- 1 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Pork Chops
Mix all the ingredients in a bowl except the pork chops. Sprinkle the rub on both sides of the pork chops and let sit out for 20 minutes while making the salsa.
Add a couple tablespoons of oil to a cast iron skillet and cook over medium for 6-7 minutes per side. The temperature should be 145'
Let rest for 5 minutes.
