Whether you eat meat or not, you will love these quinoa black bean burgers. Add a toasted bun and your favorite toppings, wait for the flavor explosion!
Bring quinoa and water to a boil in a saucepan. Reduce heat to medium low, simmer, covered until quinoa is tender and water is absorbed. About 15 minutes.
Coarsely mash beans in a bowl with a fork to a paste like consistency leaving 1/3 of the beans whole. Add to the beans- cooked quinoa, bread crumbs, bell pepper, egg, onion, garlic, hot sauce, cumin and salt. Form bean mixture into 4 patties.
Heat oil in a large skillet over medium heat. Cook patties 3-5 minutes per side until lightly browned. If you are nervous about the egg use an instant read thermometer and see that it registers to 165'
Toast your buns and add your favorite condiments and toppings. Mayo, arugula, caramelized onion, green chilis, lettuce, tomato just to name a few. Or setup a toppings bar and let everyone add their own.
Notes
If you happen to have frozen quinoa on hand defrost it and it will be a timesaver.
