Sausage Kale Bean Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion-chopped
  • 12 oz smoked sausage-kielbasa or andouille
  • 5 cloves garlic-minced
  • 5 cups chicken broth-divided
  • 8 oz kale-stems removed and finely chopped
  • 1 bay leaf
  • 1/2 tsp garlic powder
  • 4 cans white beans-drained and rinsed
  • 4 dashes hot pepper sauce
  • salt and pepper to taste
  • shredded parmesan-garnish
  • chopped parsley-garnish

Instructions
 

  • Slice sausage into 1/4" slices and set aside.
  • Add 1 tablespoon oil to a large skillet and cook sausage until browned, about 5-7 minutes. Remove sausage to a paper towel lined plate.
  • Add onion and cook for 7 minutes until translucent. Add in garlic and cook for 1 minute until garlic is fragrant.
  • Pour in broth and add the beans. Use an immersion blender to puree part of the soup. Do not puree all the beans.
  • Add the kale, bay leaf and garlic powder and bring to a boil. Reduce to simmer, cover and cook for 5 minutes.
  • When kale is tender add back in the sausage. Season with hot sauce, salt and pepper to taste. Stir and simmer for 15 minutes.
  • Remove bay leaf before serving.
