Sausage Kale Bean Soup

- 2 tbsp olive oil
- 1 onion-chopped
- 12 oz smoked sausage-kielbasa or andouille
- 5 cloves garlic-minced
- 5 cups chicken broth-divided
- 8 oz kale-stems removed and finely chopped
- 1 bay leaf
- 1/2 tsp garlic powder
- 4 cans white beans-drained and rinsed
- 4 dashes hot pepper sauce
- salt and pepper to taste
- shredded parmesan-garnish
- chopped parsley-garnish
Slice sausage into 1/4" slices and set aside.
Add 1 tablespoon oil to a large skillet and cook sausage until browned, about 5-7 minutes. Remove sausage to a paper towel lined plate.
Add onion and cook for 7 minutes until translucent. Add in garlic and cook for 1 minute until garlic is fragrant.
Pour in broth and add the beans. Use an immersion blender to puree part of the soup. Do not puree all the beans.
Add the kale, bay leaf and garlic powder and bring to a boil. Reduce to simmer, cover and cook for 5 minutes.
When kale is tender add back in the sausage. Season with hot sauce, salt and pepper to taste. Stir and simmer for 15 minutes.
Remove bay leaf before serving.
