Shaved Cauliflower Salad

Ingredients
  

  • 1/2 Head Cauliflower
  • 1 Oz Medical dates-pitted and chopped
  • 1 Oz Olive oil
  • 1 Oz White wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Water
  • 1 Clove Garlic-smashed and peeled
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1 Rib Celery-sliced thin plus celery leaves1
  • 1/4 Cup Parsley-chopped
  • 1 Tbsp Taragon-chopped
  • 1 Oz Parmesan cheese-shaved
  • 1/4 Cup Pistachios-toasted and chopped

Instructions
 

  • Slice out the core of the cauliflower and cut the stem flush with the bottom of the head. Remove the florets and slice lengthwise as thin as possible. Transfer cauliflower to a bowl.
  • In a food processor add dates, oil, vinegar, mustard, water, garlic, salt and pepper, process until smooth. It's OK to have some bigger date pieces. Scrape down the siee of the bowl as necessary. Add dressing to bowl with cauliflower. Thin out with a little water if needed.
  • Add celery, celery leaves, parsley, and tarragon to cauliflower mixture. Toss gently to combine. Refrigerate cauliflower until softened, at least 30 minutes or up to 12 hours.
  • Right before serving fold in parmesan and pistachios. Season with salt and pepper to taste. Transfer to a serving platter.
