Sheet Pan Hoisin Shrimp
Rushed for time then sheet pans will become your best friend. This sheet pan hoisin shrimp is one of my favorite meals.

- 1/4 cip hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tsp sesame oil
- 1 tsp sriracha
- 1 large bok choy-cut into 3" pcs
- 2 red bell pepper-cut into strips
- 1 lb portobello mushrooms-sliced
- 2 tbsp canola oil
- 1 lb jumbo shrimp-deveined and peeled
- 2 tsp sesame seeds-garnish
- chopped scallions-garnish
Heat oven to 450'
Line a baking sheet with foil.
Combine hoisin, soy sauce sesame oil and sriracha in a small bowl and set aside.
Place bok choy, and mushrooms on prepared baking sheet. I used a separate baking sheet for the peppers but if you don't have anyone in your family that doesn't like bell peppers add them to the sheet with the bok choy.
Combine 3 Tbsp of the hoisin mixture with the canola oil. Pour over the vegetables and toss to coat.
Toss shrimp with the remaining hoisin mixture. Put shrimp on top of vegetables.
Roast for 20 minutes. Garnish with sesame seeds and scallions. Serve additional soy sauce if needed.
